Chocolate – Cranberry Energy Bites
2/3 cup natural peanut butter
1/2 cup organic raw honey
1 1/2 teaspoon vanilla
1 cup rolled oats {I use these.}
1 cup unsweetened coconut flakes
1/4 cup cocoa powder
1/2 cup finely chopped walnuts {or pecans}
1/2 cup dried cranberries
1/2 cup mini chocolate chips {these are our favorites}
Mix peanut butter, honey and vanilla in a medium bowl. Add remaining ingredients and mix together until evenly combined. Using your hands works wonders. ;) Refrigerate for 30 minutes.
Press and form mixture into 1-2 inch balls. There will probably be some little bits left in the bottom of the bowl. Just scoop those out for yourself. ;)
Store in an airtight container in the fridge for up to a week.
