Red Pepper & Pumpkin Omelette
Ingredients (Serves 1)
1 Large Egg (Full)
150 mls Egg Whites
20 grams Reduced Fat Feta Cheese
100 grams Pumpkin
100 grams Roasted Red Peppers
5 grams Fresh Basil Leaves
Cooking Instructions:
Cut pumpkin into small cubes and boil in water. While pumpkin is boiling, whisk the whole egg and egg whites together in a small bowl.
Pre heat a non stick fry pan to medium and once warm, slowly pour egg mix onto pan.
Allow to cook slowly until egg is cooked through.
When pumpkin is boiled, drain and mash.
Cut basil leaves into small pieces and then add basil, pumpkin, peppers and feta onto omelette.
Flip omelette to allow contents to heat and then remove from pan and serve.
